Nory is an all-knowing restaurant management system. It blends real-time data with AI predictive analytics, giving operators control of their margins. And we’re just getting started. Fresh off a Series B led by Kinnevik, we’ve grown to 70+ people across Ireland, the UK, and Spain – and demand is scaling faster than we ever imagined.
We’re now looking for a Senior AI Engineer to join our growing Insights Team. In this role, you’ll build and scale production-grade AI agents that transform how hospitality operators interact with data and automation at Nory. This is not a research role — it’s a hands-on engineering position at the edge of what’s possible in applied AI. You’ll help define what “production-grade AI” looks like at Nory and set the bar for how we build, deploy, and scale intelligent systems that power a more profitable, sustainable hospitality industry.
What you’ll be doingAs an AI Engineer at Nory, you’ll bring our AI roadmap to life - designing, building, and scaling intelligent agents that supercharge restaurant operations. You’ll work at the intersection of data, engineering, and product, turning cutting-edge AI into real-world impact for hospitality operators.
Here’s what you will be responsible for:
Adapt and deploy pre-trained models using techniques such as prompt engineering, Retrieval-Augmented Generation (RAG), and fine-tuning to create reliable, context-aware AI agents.
Build and scale production-grade infrastructure that allows models and agents to run efficiently, securely, and at scale across our customer base.
Integrate AI capabilities into core Nory workflows, collaborating closely with product, design, and data teams to deliver measurable value to customers.
Solve real operational problems using AI to improve forecasting, automate insights, and reduce friction for restaurant teams.
Monitor and optimise live systems to improve model inference speed, cost-efficiency, and quality, informed by user feedback and data.
Collaborate across disciplines, helping shape Nory’s broader AI strategy while sharing learnings and best practices with other engineers.
Proven experience leading, building and running LLM-based or agentic workflows in production, using frameworks like LangChain, LlamaIndex, or similar. You’ve built multi-step workflows, orchestrated tools or APIs, and handled failure modes and retries.
Solid grounding in AI and ML concepts, from model fine-tuning and embeddings to NLP and real-world optimisation, including prompt engineering, RAG, and evaluation frameworks.
Strong engineering fundamentals, you write clean, testable code and know how to take systems from prototype to production. We use Python, but we’re open to candidates from other languages who understand the patterns and can ramp fast.
Hands-on experience with cloud platforms (AWS, GCP, or Azure) and MLOps practices for deployment, scaling, and observability.
Comfort with data engineering, building or maintaining data pipelines, handling large datasets, and instrumenting models for feedback loops.
Strong commercial awareness, you understand how to apply AI to deliver real business value, not just technical novelty.
A startup mindset, you thrive in fast-paced environments, move quickly, and take initiative to maintain momentum and resolve issues efficiently. You are comfortable with ambiguity and multitask effectively while delivering real impact.
